Vegetarian Peanut Butter Cookies - They THAW in your mouth!

All these Banana Oatmeal Cookies are hands down the very best banana flavored cookie I've ever had. Not only are they are moist and simmer for days, they're unmistakably banana-y.

Banana can be one of these flavors that can get lost once you inhale with it. It can be very delicate flavor. It always bums me out once that happens, because I LOVE the taste of banana. And so does the hubs.

When great brewed banana treats come along, we move a little mad for them.

These cookies make the record of banana things to go crazy for. With no doubt.

And they're so moistthey almost melt in your mouth. Additionally, with both oats and banana inside them, they're basically healthy, right? And perfect for breakfast!

Making them is just as simple as eating them.

You have the typical suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You begin by mixing all those beautiful components together.

I have to warn you. The odor of the mixture -- with the banana -- is equally intoxicating. The hubs was in the kitchen creating the dough together with me (we left a deal that contained him carbonated with me) and we had to work hard not to place our faces, or a straw, straight in to it.

You then add all the dry ingredients (which usually means you simply use one bowl -- yay!) And mix it all together!

To bake themspoon out about a tablespoon of bread and make a thick disc, instead of a chunk. They spread a bit when baking, so don't put them too close together. Bake them for approximately 10-12 minutes to get a nice, moist cookie. So yummy!

1 additional thing I really like about this recipe is really where it came out.

My grandmother (my dad's mother ) passed away in 2008. After I started draining a lot a couple of years back, my uncle gave me cookbook that he'd had didn't use. I've had it in my list to make several her desserts since.

My dad and I left her gaufrettes (a French cookie -- my great grandparents were French) a year or so ago. It was a custom for my grandma to make them each Christmas! She also gave everyone a huge tin of these, which was really a feat with 6 sons.

I now know precisely how much of an effort it had been! My goodness. She made them with a conventional gaufrette iron that goes over a open fire. My dad and I had them around the stove. They cook very quickly and you have to be precise. Too little time and they sort of disintegrated into the iron. Overly long and they burnt to the iron and we needed to scrub it out.

My father was massaging the batter and removing the cookies, I had been working the iron, the hubs was time things. It took a number of tries to get it right, but they had been so excellent! I have attempted to create them again on my own and it works. I'd really like to share the recipe, however, the dang irons are so hard to find. And expensive. Sooner or later, I would like to just make a cookie cutter with the exact same gaufrette flavor.

For now though, I am sharing these cookies. I really don't believe I had them made them, but they're from her book.

It's such an enjoyable recipe book to check through, too. There are so many handwritten pages, including clippings and newspaper recipes that were taped into the book. I like Read Full Article the way that they used to write recipes from the paper -- they had the individual who filed it's title and adorable little stories. It's so fun to read through them! What a different time in the world!

Anyways, I do not really know where this recipe originated from. The paper appears like it was on a flier from their square dance group or something (they were big into square dance ). It's definitely from West Virginia, in which they lived.

In any event, I'm so happy to finally share a recipe out of her novel with you! I made a few changes to make them thicker and more puffier and they're delicious. There will be more to come out of her recipe book, but for the time being enjoy the banana.

Banana Oatmeal Cookies


Yield: 34-36 COOKIES


1 cup brown sugar, packed

1/2 cup sugar

1 egg

1 tsp vanilla extract

1 cup mashed bananas

1 1/2 cups all purpose flour

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 tsp ground cloves

2 tsp cornstarch




3. Stir in oats.

4. Preheat oven to 350 degrees.

5. Flatten dough a little bit, into thick discs. They'll disperse a little when baked.

6. Bake for 10-12 minutes or until edges just begin to gold.

7. Remove from oven and cool on cookie sheet for 3-4 minutes, then proceed to cooling rack to complete cooling.
